SPANISH STEAKS 
4 cube steaks
1 tbsp. butter
3 tbsp. chopped celery
2 tbsp. chopped green chili peppers
1/2 tsp. mustard seed
1 tbsp. chopped parsley or cilantro
3 tbsp. green pepper
2 tbsp. oil
1/4 tsp. salt and pepper
2 lg. chopped tomatoes
1 tbsp. vinegar

Combine tomatoes, onion, celery, green and chile peppers, mustard seed, cilantro, vinegar, salt and pepper to taste. Let stand for 30 minutes.

Heat butter in a skillet and brown steaks over medium heat. Reduce heat and cook until done. Sprinkle with salt and pepper. Pour half of salsa (above) over mixture and simmer 5 minutes. Serve with sour cream, grated cheese and remaining salsa with tortilla chips.
