GOURMET TENDERLOIN CASSEROLE 
1/2 c. flour, divided
2 1/2 tsp. salt, divided
1/2 tsp. paprika
2 lbs. ground pork (to make 16 patties)
1/4 c. butter
1/2 c. chopped onion
1/2 c. chopped green pepper
4 oz. can sliced mushrooms, drained
2 c. milk
2 1/2 tbsp. lemon juice
1/4 tsp. pepper
Parsley

Combine 1/4 cup flour, 1 1/2 teaspoon salt, and paprika. Dredge patties in flour mixture.

In heavy skillet over moderate heat, brown patties well in butter. Arrange patties in 2-quart casserole. Add onions, green pepper, and mushrooms to pan drippings; cook slowly until onion is tender. Add remaining 1/4 cup flour; mix well.

Stir in milk and cook, stirring constantly, until thickened. Stir in lemon juice, remaining 1 teaspoon salt and pepper. Pour over meat. Cover and bake at 350 degrees for 30 minutes. Lower oven to 325 degrees and bake 1 hour longer. Serves 8 for dinner or 16 party appetizers. Garnish with parsley.
