GRILLED TOP LOIN STEAKS 
beef top loin, cut 1 to 1 1/2-inches
salt and pepper
Vegetable Packets

Place steaks on grill over ash-covered coals so they are 2 to 3-inches from coals. Broil at medium temperature. When first sides are browned, turn and season with salt and pepper and finish cooking on second side. Steaks 1-inch thick require about 12 to 15 minutes for rare, 18 to 20 minutes for medium. Steaks cut 1 1/2-inches thick require 22 to 25 minutes for medium. Serve Vegetable Packets with steaks.

Vegetable Packets:

2 medium tomatoes, sliced 1/4-inch thick
2 medium onions, sliced thin
2 medium green peppers, cut into rings
12 mushrooms, halved
salt and pepper

Alternately place slices of tomato, onion and green pepper in 4 overlapping pieces of foil each 9 x 12. Top each with mushrooms; season with salt and pepper and 1 teaspoon butter. Close foil packs with double fold. Turn up ends and fold to close securely. Place on grill and cook at medium temperature for 10 to 15 minutes or until vegetables are done.

Makes 4 to 5 servings.
