EASY TOMATO ASPIC 
1 3/4 c. V-8 juice
1 envelope plain gelatin, dissolved in 1/4 c. cold water
1 tbsp. diced onion

Boil juice and onion 3-4 minutes in saucepan. Stir in dissolved gelatin. Pour into loaf pan coated with non-stick spray. Chill until firm. Turn out and slice.
