RICE AU GRATIN 
3 c. cooked rice
1 1/2 c. thin white sauce
1 c. grated cheese

Put a layer of rice in a greased baking dish. Sprinkle with cheese and cover with a layer of hot white sauce. Repeat until all the ingredients are used, having a layer of cheese on top. Bake in hot 400 degree oven for 20 to 25 minutes.

THIN WHITE SAUCE:

1 tbsp. Crisco
1 tbsp. flour
3/4 tsp. salt
1 c. milk
Pinch of pepper

Melt Crisco, add flour, salt and pepper. Mix well. Add milk slowly and bring to a boiling point, stirring constantly to avoid lumps. Place over hot water until ready to use.
