ROAST BEEF WITH COFFEE 
3 to 5 lb. beef roast, any cut
Onion or garlic slivers
1 c. vinegar
2 tbsp. salad oil
2 c. black coffee
2 c. water
Salt and pepper

Use a large knife to cut slits completely through thawed meat. Insert slivers of onion or garlic into the slits. Place meat in bowl and pour vinegar over meat, making sure it runs down into the slits. Marinate in refrigerator for 24 to 48 hours.

When ready to cook, place meat in deep heavy pot and brown well on all sides in oil. Cover with coffee and water. Place lid on pot and simmer on to of stove for 2 to 4 hours. Season with salt and pepper 20 minutes before serving.
