RHUBARB PIE 
3 c. rhubarb
3 tbsp. tapioca
3 tbsp. sugar
3 oz. pkg. red jello
1 (9-inch) unbaked pie crust

STREUSEL:

1 c. sugar
1/2 c. flour
1/3 c. butter

Place rhubarb in pie crust. Sprinkle tapioca, sugar and jello over rhubarb. Mix streusel ingredients together until crumbly. Sprinkle this over top.

Start baking at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake for at least 40 minutes or more.
