RICE SALAD 
2 c. cooked rice (cooked in chicken broth)
1/2 c. sliced celery
1/2 c. sliced ripe olives
1/4 c. minced onion
1/4 c. diced pimientos
1/4 c. bottled Italian salad dressing
2 tbsp. mayonnaise
Lettuce leaves

Cool rice to room temperature and combine with celery, olives, onions, pimientos in a large salad bowl. Combine salad dressing and mayonnaise with whisk or fork in a small bowl until well blended. Pour over rice mixture and toss lightly. Serve on lettuce leaves. Serves 4. Each serving 232 calories.
