BAKED EGGPLANT 
1 whole eggplant
1 tbsp. salt
1 tbsp. onion salt
1 c. grated cheese
1/2 tbsp. black pepper
1 stick butter
1 c. cracker crumbs

Peel eggplant, slice as in cooking potatoes, cook until tender then cream. Add above ingredients, put in a casserole dish and sprinkle more cheese and cracker crumbs on top. Put in oven and let brown for 10 minutes. Serves 6 to 10.
