WYATT'S BAKED EGGPLANT 
1 lb. eggplant (peel, soak in salt water)
1/2 lb. toasted bread crumbs
1 sm. can Pet milk
1/4 c. whole milk
1/4 c. chopped onion
1/4 c. green pepper
1/4 c. celery
1/2 stick butter
Salt to taste
2 beaten eggs
1/2 tsp. pepper
1 tsp. sage
1/4 c. chopped pimento
2 oz. grated cheese
Seasoning salt or Accent

Mix and bake at 350 degrees until brown on top.
