BAKED EGGPLANT 
Eggplant, peeled and sliced into 1/4 inch slices
2 eggs, beaten
Mozzarella cheese, shredded
Tomato sauce

Dip eggplant slices in beaten egg and fry in oil until brown on both sides. Drain on paper towel. Cover bottom of baking dish with tomato sauce. Cover with layer of eggplant slices. Spread a little more sauce on slices and sprinkle with cheese. Continue with layers of eggplant, sauce and cheese, etc. Covering top layer with sauce. Bake 45 minutes at 350 degrees.
