BAKED ZUCCHINI 
6 sm. zucchini
2/3 c. sour cream
1 tbsp. butter
6 tbsp. grated Sharp Cheddar cheese
3/4 tsp. chives
1/2 tsp. seasoned salt
3 tbsp. fresh bread crumbs
1 egg, beaten

Preheat oven to 350 degrees. Grease a baking dish. Cut zucchini in small pieces. Boil for 6 to 7 minutes. Drain. In saucepan, cook butter, sour cream, salt, chives, egg and 4 tablespoons of the grated cheese. Cook over low heat, stirring continuously until thickened. Put zucchini in baking dish. Pour sauce over. Top with remaining cheese and bread crumbs. Bake 10 minutes or until golden brown.
