PUMPKIN OAT MUFFINS 
1 c. sifted flour
2 tsp. baking powder
1 tsp. pumpkin pie spice
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. canned mashed pumpkin
1/2 c. brown sugar, packed
1 egg, slightly beaten
1/4 c. milk
1/4 c. cooking oil
1 c. quick cooking oats
1/2 c. raisins

Sift together dry ingredients. Combine remaining ingredients in bowl. Blend well. Add dry ingredients; stir just enough to moisten. Fill greased 3 inch muffin pan cups 2/3 full. Sprinkle with topping. Bake in 400 degree oven for 18-20 minutes or until done. Makes 12.

TOPPING:

Combine 1/2 cup packed brown sugar, 1 tablespoon flour, 1/4 teaspoon pumpkin pie spice and 2 tablespoons butter.
