PUMPKIN - APPLE STREUSEL MUFFINS 
1/2 c. oil
2 eggs
1 c. pumpkin
2 1/2 c. flour
2 c. sugar
1 tsp. baking soda
1 tbsp. pumpkin pie spice
1/2 tsp. salt
2 c. peeled chopped apples

STREUSEL TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon
4 tsp. butter

Mix until crumbly.

Beat well first 3 ingredients. Stir in dry ingredients until moistened. Stir in apples. Spoon batter into greased or paper lined muffin cups filling 3/4 full. Sprinkle with Streusel Topping. Bake at 325-350 degrees for 35-40 minutes. (I usually double, so I can use the whole can of pumpkin, they freeze well.)
