BROCCOLI QUICHE 
2 deep-dish pie shells
2 oz. box frozen broccoli
1 c. shredded Swiss cheese
1/3 c. finely chopped onion
4 eggs
2 c. heavy whipping cream
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground red pepper (cayenne)
1/4 c. sugar (optional)

Sprinkle broccoli, onion and cheese in pie shell. Beat eggs slightly; add other ingredients. Pour over broccoli, onion and cheese. Bake 15 minutes at 425 degrees. Reduce oven temperature to 300 degrees. Bake 30 minutes. Let stand 10 minutes before serving.

SEAFOOD QUICHE:

Substitute 1 cup cooked crabmeat, shrimp or salmon for the broccoli. Use green onion for the onion. (Pat crabmeat dry and drain the salmon.) Increase salt to 1/2 teaspoon.
