BROCCOLI QUICHE 
PASTRY:

2 c. flour
1 c. Crisco
1 tsp. salt
1/4 to 1/2 c. milk

Mix well and press into pie pans. Makes several crusts. Fit aluminum foil over bottom and sides of crust; cover with uncooked rice to hold pastry in place while baking. Bake crust for 7 minutes in preheated oven 400 degrees. Remove foil and rice and bake an additional 5 minutes. Cool.

QUICHE:

4 eggs
2 tbsp. melted butter
3/4 c. whipping cream
3/4 c. milk
1 tbsp. flour
Pinch of salt
Pinch of cayenne pepper
Pinch of nutmeg
1 c. cooked, chopped broccoli
1/2 lb. fried bacon, crisp & crumbled
1 c. grated Swiss cheese
1 bunch chopped green onions

Beat eggs, cream butter, flour and seasonings with wire whisk. Sprinkle the bacon, cheese and onions over crust and pour on egg mixture. Bake 40 minutes at 373 degrees.
