BANANA BREAD 
1 3/4 c. flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1/3 c. Crisco butter flavored shortening
2/3 c. sugar
2 eggs, slightly beaten
1 c. mashed bananas (approx. 2-3)
1 c. pecan pieces

Combine flour, baking powder, baking soda and salt; set aside. Cream shortening and then add sugar gradually. Continue to beat until light and fluffy. Add eggs and mix until smooth. To this mixture, add the dry ingredients alternately with the bananas, mix just enough after each addition to combine thoroughly (do not beat). Fold in pecans.

Bake in a greased loaf pan (9 1/4 x 5 1/4 x 2 3/4 inch) at 350 degrees for 1 hour. Bread will brown and crack on top. Check - bread is done when toothpick inserted in center comes out clean.
