NANCY'S FAVORITE BANANA BREAD 
1 c. sugar
1/2 c. shortening (Crisco)
2 eggs
2 lg. or 3 sm. mashed bananas
1 c. plus 2 tbsp. sifted flour
1 tsp. baking soda
1/2 tsp. salt

Cream sugar and shortening with mixer. Add eggs and beat. Add mashed bananas and blend. Add sifted flour, soda and salt; beat until well blended. Turn into a well-greased and lightly floured loaf pan. Bake at 350 degrees (325 degrees if in glass pan). Cool 10 minutes in pan and then turn out on rack to cool. Slice when cool; serve with butter if desired or ice with glazing-type icing.

Makes 1 loaf.
