KONA BANANA BREAD 
1/2 c. Crisco
1 c. sugar
2 eggs
3/4 c. mashed ripe banana
1 1/4 c. sifted CAKE flour (do not pack in cup)
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped walnuts, optional

Cream shortening and sugar until light. Add eggs, one at a time, beating well after each. Stir in bananas. Sift together dry ingredients, add to banana mixture. Mix until well blended, add chopped nuts. Pour into 9x9x2 loaf pan, bake at 350 degrees for 30 to 35 minutes. Cut into squares, cool.
