HAWAIIAN BANANA NUT BREAD 
1 c. shortening
2 c. sugar
6 ripe bananas, mashed
4 well beaten eggs
2 1/2 c. cake flour
1 tsp. salt
1 tsp. baking soda
1 c. chopped nuts

Cream shortening and sugar. Add bananas and eggs. Sift flour, salt, and soda together. Add 1 cup nuts to flour mixture. Very gently fold dry ingredients; do not over mix. Bake at 350 degrees for 45-50 minutes. Makes 2 large loaves. Check center for doneness. The riper the bananas, the longer the cooking time.
