NO FAT CREAM CHEESE 
1 lg. container non-fat yogurt
Cheese cloth
1/2-3/4 c. chopped fruit

Place yogurt in cheese cloth and suspend over a bowl overnight. A cupboard shelf works well for this. The moisture in the yogurt will separate and collect in the bowl. In the morning, open the cheese cloth and you'll have cream cheese. Chopped fruit can be added to it at this point and it makes a wonderful no fat spread. Minced onions, basil and salt can be added for a different variation.
