SHISH KEBAB 
Cut in small cubes without bone, skin, or fat.

FOR MARINADE:

1/2 c. olive oil
1/2 c. red vinegar
Salt
Pepper
Oregano
Garlic, chopped fine
Thyme
Marjoram
Rosemary

OPTI ONAL GARNISHES:

Sm. tomatoes
Pieces of green pepper
Mushrooms
Sm. whole onions, parboiled
Sm. whole potatoes, parboiled

Cut meat into pieces about 1 inch cubed (or somewhat smaller to make bite-size pieces for children). Put together marinade ingredients in a shallow dish or casserole, covering meat pieces. Put dish in refrigerator for 3-6 hours, turning occasionally. Remove meat from marinade. Thread 5-6 chunks of meat onto wooden or metal skewers, leaving space between each pieces; put 3 pieces on skewers for children. Bake at 350 degrees in oven for 20 minutes on roasting platter. Serve on top of a mound of rice.
