HOT TOMATO RELISH 
5 gallons tomatoes
1 lb. hot pepper
6 bell peppers
2 1/2 oz. Italian seasoning
1/4 c. sugar
2 tsp. salt
4 c. vinegar

Mix all ingredients together. Cook until mixture cooks down 1" (about 3 hours). Have jars hot and lids in hot water. Put in jars and seal. NOTE: This is delicious in soups, sauces as a dip or with vegetables.
