RED HOT TOMATO RELISH 
20 red ripe tomatoes
1 pt. vinegar
3 hot red peppers
1 tbsp. black pepper
3 lbs. sugar
6 onions
4 green bell peppers
1 tbsp. salt

Peel fresh tomatoes and cook over medium heat on top of stove until almost done. Drain and add remaining ingredients. Stir constantly until onions and peppers are done.

Pour hot relish into sterilized canning jars leaving 1/4-inch headspace. Process 1/2 pints in a boiling water bath for 10 minutes, pints 15 minutes.

Delicious over dried beans.

Makes 3 to 4 pints.
