“VANILLA YOGURT CUPCAKES” IS IN:

VANILLA YOGURT CUPCAKES 
1 1/2 cups all-purpose flour
pinch of salt
2 tsp. baking powder
3 eggs, separated
2 tbsp. butter
1 cup sugar
1 cup yogurt (use full-fat for extra creamy flavor)
2 tsp. vanilla extract

Combine flour, salt and baking powder in a mixing bowl; set aside.

Whisk together egg yolks and add butter and sugar. Fold yogurt and vanilla into egg yolk mixture.

In a separate bowl, beat egg whites until foamy. Combine yolk mixture and egg white. Gently fold in flour.

Grease 15-16 muffin/cupcake cups with butter.

Bake in a preheated oven at 350°F for 15 to 20 minutes. Remove from oven when a toothpick inserted in center of a cupcake comes out clean.
