DELUXE POTATO CASSEROLE 
1 lg. pkg. frozen hash browns
2 tbsp. chopped onion
1 stick butter
8 oz. sour cream, (plain or w/chives)
1 can cream of chicken soup
1/2-1 c. shredded cheddar cheese

Melt stick of butter in small saucepan. Add onions and saute. Add sour cream and soup; stir well.

Place hash browns in greased (large) casserole dish. Pour sour cream mixture over hash browns, covering completely. Top with cheddar cheese. Bake at 350 degrees for 45 minutes or until hash browns are tender.
