MOM'S YELLOW SQUASH 
6 c. fresh yellow squash
Water to cover squash
1 tsp. salt
1 c. butter, melted
1/2 c. onions, finely diced
1/2 c. green peppers, finely diced
3 eggs
3 tbsp. sugar
1 1/2 c. mayonnaise

Slice squash into 1/2 inch slices. Steam squash for 4 minutes. Drain squash. Add melted butter to squash, onions and green peppers, tossing lightly to coat.

In a separate container beat eggs with hand wire whip. Add sugar and mayonnaise. Mix well. Add egg mixture to squash; mixing thoroughly. Pour into baking pan and bake at 350 degrees for 45 minutes. Garnish with grated cheese. Return to oven until cheese melts. Remove from oven and top with crushed Ritz crackers.
