INDIVIDUAL CHEESE CAKES 
1 box vanilla wafers
Sm. paper muffin liners
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
1 tsp. vanilla
3 eggs, separated
3/4 c. sour cream
2 1/2 tbsp. sugar
1 tsp. vanilla
21 oz. can cherry pie filling

Place vanilla wafers in paper cups. Mix cream cheese, 3/4 cup sugar, egg yolks and 1 teaspoon vanilla. Beat well and fold in stiffly beaten egg whites. Fill tin with about 1 heaping tablespoon of this mixture.

Bake at 350 degrees for 15 minutes. Cool 5 minutes. Combine sour cream, 1 teaspoon vanilla and 2 1/2 tablespoons sugar. Top baked cakes with 1 teaspoon of this. Bake for 5 to 7 minutes. Top with 1 teaspoon cherry pie filling (about 1 or 2 cherries per cake). Makes 48 to 52.
