INDIVIDUAL CHEESE CAKES 
16 vanilla wafers
2 (8 oz.) pkg. cream cheese
1 tsp. lemon juice
1 tsp. vanilla
2 eggs
3/4 c. sugar
Pinch of salt
Muffin paper cups

Place vanilla wafers in bottom of large muffin paper cup. Mix together the rest of the ingredients. Fill cup 3/4 full with cream cheese mixture. Bake 20 to 25 minutes at 350 degrees. Cool 1 hour.

Remove paper cup and refrigerate or freeze. Top with strawberry glaze, cherry pie filling or any fruit topping desired before serving. Makes 16 servings.
