LADY FINGER CHEESE CAKE 
3 lb. ricotta
7 eggs
2 yolks
4 tsp. orange juice or Tang
2 pkg. Lady Fingers
1 3/4 c. sugar
1/4 c. heavy cream or Coffee Mate
4 tsp. flour (don't level them, make them nice and full)

Butter pan top and bottom and spread Lady fingers close together. Set aside. Beat ricotta, sugar, egg and cream for a few minutes. Add flavoring and flour. Beat until smooth, pour over Lady fingers. Bake in oven at 350 degrees for 1 1/2 hour. Check after one hour. Some ovens are different.
