ONION SHORTCAKE 
1 white sweet onion, lg.
1/4 c. butter
1 1/2 c. corn muffin mix
1 egg, beaten
1/3 c. milk
1 c. creamed corn
1 c. sour cream
1/4 tsp. salt
1/4 tsp. dill weed
1 c. shredded sharp Cheddar cheese
2 drops hot sauce, optional

Peel and slice onion, cook in butter until tender and set aside. Combine muffin mix, egg, milk, corn and hot sauce. Turn into a greased 8 inch square pan. Add sour cream, salt and dill weed and 1/2 cup of cheese to onion. Spread onion-cheese mixture over batter. Sprinkle with remaining cheese. Bake at 425 degrees for 25-30 minutes. Cut in square and serve warm.
