APRICOT COFFEE CAKE 
1 c. sugar
1 c. oil
2 eggs
1 c. sour cream
2 c. flour
1 tsp. salt
1 tsp. baking soda
1 can apricot pie filling

TOPPING:

1 c. sugar
1 tsp. cinnamon
1 c. chopped nuts

Mix sugar and oil. Beat in eggs. Add remaining batter ingredients and mix well. Put half of batter in pan. Cover with pie filling and then rest of batter on top.

Put on topping.

Bake at 350 degrees for 40 minutes.
