AUNT VICKY'S SWEET POTATO
CASSEROLE
 
3 cups cooked and mashed sweet potatoes
1/2 cup sugar
2 eggs beaten
1/2 tsp. salt
1/2 stick + 1/3 stick butter, divided
1/2 cup milk
1 1/2 tsp. vanilla extract
1/2 cup brown sugar
1/3 cup all-purpose flour
1 cup chopped pecans

Combine sweet potatoes, sugar, eggs, salt, 1/2 stick butter, milk and vanilla extract. Mix by hand. Spoon into casserole dish.

In separate mixing bowl combine brown sugar, flour, pecans and remaining 1/3 stick butter (melted). Spread over sweet potato mixture. Bake at 350°F for 35 minutes.
