PICKLED PEACHES 
8 lbs. peaches, peeled (whole)
2 qts. vinegar
1 tbsp. whole cloves
9 c. sugar
4 long sticks cinnamon

Combine vinegar, sugar, and spices. Boil 5 minutes. Add peaches and cook gently until tender, but not broken. Let stand in syrup overnight. Drain syrup from peaches; boil syrup until almost as thick as honey. Pack peaches in jars; cover with hot syrup and close immediately.
