WINTER SALAD 
1 lb. fresh Redleaf, Romaine and Bibb lettuce, washed, dried
2 red apples, cored, diced
1/2 c. chopped red cabbage
2/3 c. sliced fresh mushrooms

DRESSING:

2 tbsp. fresh lemon juice
1 tbsp. Dijon mustard
1/2 tsp. sugar
1 egg white
2/3 c. olive oil
Salt and pepper to taste

Assemble salad ingredients. For dressing: Combine lemon juice, mustard, sugar and egg white in a bowl. Then add olive oil in a streak, whisking until well combined and thickened. Toss salad with dressing and serve.
