PECAN DROP COOKIES | |
1/4 tsp. salt 2 c. sifted all-purpose flour 1/2 c. butter or reg. butter, softened 1/2 c. shortening 1 c. sifted confectioners' sugar 2 tbsp. light cream 2 tsp. vanilla extract 1 c. coarsely chopped pecans or walnuts 1. Preheat oven to 350 degrees F. 2. Sift flour with salt; set aside. 3. In large bowl, with wooden spoon or electric mixer at medium speed, beat butter, shortening, sugar, cream and vanilla until smooth and fluffy. 4. Stir in flour mixture until well combined. Stir in nuts. 5. Drop by rounded teaspoons, 2 inches apart, onto ungreased cookie sheets. Decorate, if desired, with additional nuts (chopped). 6. Bake 15 to 20 minutes, or just until light golden. Remove to wire rack; cool. Makes 4 dozen. |
