BEEF AND TOMATO CASSEROLE 
1 can beef consomme (Campbell's soup)
1 (16 oz.) can tomatoes
1/2 stick butter
1 med. onion
1 c. rice (brown or reg., uncooked)

Combine consomme, chopped tomatoes and chopped onion in casserole dish, approximately 2 quarts in size. Add and stir in rice. Cut butter in chunks over other ingredients. Bake at 325 degrees for 30 minutes. Stir and cook 30 minutes more or until thickened.

May prepare ahead of time and refrigerate - if rice not added. Excellent with seafood, chicken or pork. Serves 6-8.
