DATE BALLS 
1 c. plus 1/4 c. sugar
2 eggs
1/2 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
1 c. pitted dates, chopped
1 c. pecans, chopped

Preheat oven to 350 degrees. Grease an 8 inch square pan; set aside. In mixer bowl with mixer at medium speed, beat 1 cup sugar and eggs until fluffy. In another bowl combine flour, baking powder and salt. Add to the sugar mixture and blend. Fold in dates and pecans. Spoon batter into prepared pan. Bake for 30 minutes. Remove from oven and stir immediately with a wooden spoon; let cool completely. Roll into 1 inch balls and coat with remaining sugar. Makes 3 dozen.
