GREEK SPINACH SALAD | |
1/2 lb. fresh spinach 1 head Boston lettuce 1 red bell pepper 1 green bell pepper 1/2 lb. feta cheese (about 2 c. crumbled) 1/3 c. black olives 1 (12 oz.) can or fresh stuffed grape leaves 1 lemon Salt & pepper 2/3 c. olive oil Stem and wash spinach. Tear lettuce and spinach into pieces and place in large bowl. Add sliced peppers, crumbled cheese, olive and grape leaves. Squeeze 3 tablespoons lemon juice and combine with salt and pepper to taste in a jar. Shake well. Add oil and shake again. Pour this dressing over salad and toss gently. |
