GREEK SPINACH PIE 
4 tbsp. butter
3 eggs'
1 onion, sliced, diced
1 clove garlic, minced
4 oz. Mozzarella cheese
2 oz. Cheddar cheese
11 oz. chopped frozen spinach, thawed and squeezed dry
2 tbsp. flour
3/4 c. milk
3/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. nutmeg
4 slices bread
1 (10 inch) pie crust

Saute' onions and garlic in 2 tablespoons butter, set aside. In saucepan melt 2 tablespoons butter add flour, stir until thick and creamy. Add milk, heat and stir until thick. Slightly beat eggs and add to milk mixture. Stir in then add all cheese and spinach. Add the sauteed mixture, stir together. Pour into pie shell. Bake at 325 degrees for 45 minutes. Serves 6.

My family loved it! I used puff pastry instead of pie crust and folded dough over it. Also used fresh spinach. I cut recipe down to 1/3 and this used both pastry puff sheets.
