CASSEROLE BEEF BURGUNDY 
5 lbs. sirloin
6 scallions, chopped
1 clove garlic
2 1/2 tbsp. flour
1 qt. bottle Burgundy wine
1 1/2 tsp. salt
1/4 tsp. thyme
1 tbsp. soy sauce
9 slices bacon, chopped
1 1/2 doz. whole sm. white onions
3 doz. mushrooms
Buttered noodles

Cube beef, brown and put in large casserole. Add scallions, garlic and flour to fat left in skillet. Brown lightly. Pour in 1 1/2 cups wine. Stir until smooth. Pour over meat. Add remainder of wine to cover. Bake 1 1/2 hours at 350 degrees. After 1 hour put bacon in frying pan. Brown with onions and mushrooms. Stir into meat casserole. Cover and complete cooking. Serve with buttered noodles.
