AUNT MERTIE'S LIGHT ZUCCHINI
BREAD
 
4 eggs
1 c. oil
1/2 c. chopped nuts
1 1/2 tsp. salt
1 tsp. cinnamon
2 c. coarsely ground unpeeled zucchini (1 lg.)
2 c. sugar
1 tsp. vanilla
3 1/2 c. flour
1 1/2 tsp. baking soda
3/4 tsp. baking powder

Beat eggs until frothy. Beat in sugar until thick and lemon colored. Beat in oil and vanilla. Add nuts. Stir in dry ingredients alternately with zucchini. Bake in 2 greased and floured loaf pans at 350 degrees for 1 hour or until done. Freezes well.
