ZUCCHINI BREAD 
2 eggs, beat until light
2 c. sugar
3 tsp. vanilla
1 c. oil

Mix in order given. Sift together:

3 c. flour
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder

Add dry ingredients to egg mixture. Then add 2 cups grated raw zucchini. (If you want, you can also add 1/2 cup nuts or raisins.) Pour into 2 greased and floured bread pans, and bake at 325 degrees for about 1 hour or until toothpick comes out clean.

HINT: If possible, it is better to use frozen zucchini. As soon as you get a zucchini, grate it and store in 2 cup batches. Then all you need to do is take it out of the freezer before you begin to make the bread and add (juice and all) to mixture.
