OLD - FASHIONED MEAT LOAF 
2 lb. lean ground beef
3/4 c. pkg. plain dry bread crumbs
1 med. onion, chopped (about 1/2 c.)
1 lg. egg
1 tsp. salt
1/4 tsp. pepper

SAUCE INGREDIENTS:

1 can (8 oz.) tomato sauce
2 tbsp. cider vinegar
1/2 tsp. minced garlic
1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper

Mix all sauce ingredients in a small bowl. In a large bowl mix beef, bread crumbs, 1/2 cup of the sauce, and the remaining ingredients until blended. If you don't have a microwave-safe ring mold, invert a 6-ounce custard cup in center of a round, shallow 2-quart baking dish. Pat meat mixture evenly in dish; pour remaining 1/2 cup sauce over top. Cover loosely with waxed paper. Microwave on high 10 to 12 minutes, rotating dish 1/4 turn after 5 minutes, until meat loaf pulls away from sides of dish. Let stand covered 5 minutes. Makes 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
