FRUIT FRITTERS 
2 c. all-purpose flour
1/2 tsp. salt
1 tbsp. baking powder
2 tbsp. white sugar
1 egg, beaten
1 1/2 tbsp. melted butter
Fresh fruit
Oil for frying

1. Sift dry ingredients together in a bowl.

2. Add egg, milk and butter, stirring well to eliminate lumps.

3. Prepare fruit. Cut apples into rings, pineapple into triangles, bananas into slices, etc.

4. Dip fruit into batter.

5. Heat about 3 inches oil in heavy skillet. When bubbly, drop fritters into skillet. Turn when golden on one side.

6. Remove with slotted spoon.

7. drain on paper towels.

8. Sprinkle with powdered sugar.
