BANANA CRUNCH MUFFINS 
1 egg
2 c. Bisquick baking mix
1 1/4 c. mashed bananas (about 2 med.)
1/3 c. sugar
3 tbsp. vegetable oil

Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Beat egg slightly; stir in remaining ingredients just until moistened. Fill each muffin cup about 1/4 full. Sprinkle with Crumb Filling; drop remaining batter over filling. Bake until golden brown, about 15 minutes.

CRUNCH FILLING:

Mix 1/3 cup chopped walnuts or pecans and 3 tablespoons packed brown sugar until crumbly.
