PASTICHIO 
1 lb. Prince ziti #34, cooked according to directions
2 lbs. hamburger
2 tbsp. butter
1 chopped onion
1/2 tsp. garlic powder
Salt and pepper to taste
1/4 tsp. nutmeg
1/2 c. red wine
3 tbsp. tomato paste
1 1/2 c. water
1/4 lb. butter
5 c. milk
1/2 c. flour
3 egg yolks
Salt and pepper

Prepare meat sauce: Saute onion in 2 tablespoons butter. Add hamburger and cook until meat is brown. Add garlic powder, salt, pepper, nutmeg, and wine. Cook 5 minutes. Add tomato paste and water. Cook until water is evaporated, about 1 1/2 hours.

Prepare cream sauce: Melt 1/4 pound butter. Add salt, flour, and pepper. Add milk, stirring constantly to make a white sauce. When thickened, add yolks, blending slowly.

To assemble: Place cooked ziti in a large bowl. Add a little white sauce and all the meat sauce. Mix. Turn into a greased 11x14 inch pan. Cover with cream sauce. Sprinkle with Romano cheese. Bake at 400 degrees for 30 minutes.
