SAUSAGE CASSEROLE 
1 box of 5 Minute Long Grain and Wild Rice
1/4 to 1/2 c. onion, depending on taste
1/4 to 1/2 c. bell pepper
1/4 c. milk
1 can cream of mushroom soup
1 lb. roll of HOT sausage
1 sm. can of mushrooms
1 c. Cheddar cheese

Fix rice according to directions. As rice is cooking, saute onion and bell pepper in butter until soft, add to rice mixture. Crumple sausage into small pieces and saute until done, drain and add to rice mixture.

Add milk and mushroom soup to rice mixture, stirring until well blended. Add can of mushrooms. Place in baking dish, place cheese on top and bake in 350 degree oven for 30 minutes. This is a main dish casserole, needing only a salad. Good for a hot summer evening.
