NORMANDY STYLE CHICKEN - POULET
NORMAND
 
1 sectioned chicken
2 minced onions
1 minced garlic clove
4 thick sliced potatoes
2 diced celery stalks
1/4 c. butter or oil
2 tbsp. flour
1 c. cider
1/4 c. dry white wine
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. basil

Brown chicken in butter or oil and then remove from pan. Saute the vegetables, then remove from pan. Mix flour into the fat until well blended. After gravy has thickened add cider, white wine, salt, pepper and basil. Cover and simmer for 1 hour.
