IRISH SODA BREAD 
Serve warm with loads of butter.

4 c. flour
3 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
3/4 tsp. baking soda
6 tbsp. butter
1 1/2 c. seedless raisins
1 tbsp. caraway seeds
2 eggs
1 1/2 c. buttermilk

In a large bowl mix the flour with the next 4 ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in raisins and caraway seeds.

In a small bowl beat eggs slightly. Reserve 1 tablespoon. Stir in buttermilk. Add to flour mixture just until flour is moistened. (Dough will be sticky.)

Turn dough onto well floured surface. Knead about 10 strokes. Place in a well greased baking dish. Brush on reserved egg. Bake about 1 hour and 20 minutes at 350 degrees.
